Did you know you can prepare this breakfast casserole at home too? Just brown your sausage and layer the ingredients in the slow cooker or casserole dish in the oven. It is a perfect breakfast casserole for holidays too – camping or at home!
We had our first taste of mountain man breakfasts on a family camping trip with my son’s scout troop years ago. They called it All in One since all the ingredients are cooked in one dutch oven. I’ve since experimented with different ingredients to create several recipes I think your family will love.

Mountain Man Breakfast Ingredients
The base of the mountain man breakfast is actually traditional breakfast foods – eggs, hashbrowns, and sausage. Different and additional meats, cheeses, peppers, and onions add variety to create a flavorful breakfast casserole.
You will need a dutch oven to prepare this recipe at the campsite. This dutch oven is my top pick, but if you want more info on choosing a camping dutch oven check out this post. It also includes some neat dutch oven accessories.
Mountain Man Breakfast Recipes
I have three different mountain man breakfast recipes that are all delicious. The Traditional Mountain Man Breakfast is great for everyone and probably best if you are trying to please a large group. The Spicy Mountain Man Breakfast is for those that love some heat to their food. It is my favorite! And the Meat Lovers’ Mountain Man Breakfast is a hearty meal if you love extra meat with your eggs and tators!
Traditional Mountain Man Breakfast Recipe
1 pound sausage
2 pounds shredded, frozen hash browns
12 eggs
2 cups ( 16 ounces ) shredded cheddar cheese
Salt and pepper to taste
Heat coals in charcoal chimney starter until they begin to ash over.
Place a 12 inch (8 quart) dutch oven on about 9 hot coals. Brown/cook the sausage until no longer pink.
Add the hash browns and lightly stir with cooked sausage.
Crack the eggs into a bowl and lightly beat them with a fork. Pour the eggs over the hash browns and sausage in the dutch oven.
Cover with lid and place about 15 hot coals on the lid. Bake for approximately 30 – 40 minutes until the eggs are firm.
Sprinkle shredded cheddar cheese over eggs, hash brown, and sausage then cover with lid and bake another 5 – 10 minutes until cheese is melted.
Spicy Mountain Man Breakfast Recipe
1 pound Hot sausage
1 red bell pepper, chopped
3 – 4 jalapenos, chopped or sliced (more or less, depending on how hot you like it!)
1 small onion, chopped
2 pounds shredded, frozen hash browns
12 eggs
2 cups ( 16 ounces ) pepper jack cheese ( or cheddar)
Heat coals in charcoal chimney starter until they begin to ash over.
You can chop your peppers and onions while the coals are heating.
Place a 12 inch dutch oven over about 9 hot coals. Brown/cook the sausage until no longer pink along with the peppers and onions. Add the hash browns and lightly stir with the sausage, peppers, and onions.
Crack the eggs into a bowl and lightly beat with a fork. Pour the eggs over the sausage, hash browns, peppers, and onions. Cover with the lid and place about 15 hot coals on the lid. Bake for approximately 30 – 40 minutes until eggs are firm.
Sprinkle shredded cheese over eggs and garnish with sliced jalapenos, if desired. Cover with lid and bake 5 – 10 minutes until cheese is melted
Meat Lovers Mountain Man Breakfast
I pound sausage
8 slices bacon
8 ounce package diced ham (find near lunch meats etc.)
2 pounds cubed (sometimes called country style) or shredded, frozen hash browns
12 eggs
2 cups (16 ounces) shredded cheddar cheese
Heat coals in charcoal chimney starter until they begin to ash over.
Place dutch oven over about 9 hot coals and cook bacon until is done. Remove bacon from dutch oven and set aside. Add sausage to dutch oven and cook until done and no longer pink. Break bacon into small pieces and add to sausage. Add diced ham to bacon and sausage in dutch oven. Stir.
Add hash browns to meat mixture and lightly stir to combine.
Crack eggs in bowl and lightly beat with fork. Pour the eggs over the meat and hash brown mixture. Cover with lid and place about 15 hot coals on lid. Bake 30 – 40 minutes until eggs are firm.
Sprinkle shredded cheese over eggs, meat, and hash browns and. cover with lid and bake 5 – 10 minutes until cheese is melted.
Mountain Man Breakfast Casserole for Campers
These recipes are popular with campers! We love preparing mountain man breakfast casseroles when camping, but did you know you can also cook this at home on your stove top and oven?
